Tomato-Noodle Summer Salad


Ingredients:

1 (16 ounce) box of organic, whole wheat macaroni

2 tomatoes, diced

1 medium onion, diced

2 cucumbers, sliced

1/4 cup organic vinegar

3 Tbls. Olive oil
Sugar substitute to taste (stevia)

Instructions

Cook the macaroni according to package directions. Drain well. Add the tomatoes, onion and cucumbers and mix together well. Place the olive oil in a mixing bowl. Gradually add the vinegar being sure to stir as you add. When all the vinegar is in the bowl, mix the two ingredients together. Add sugar substitute for your taste. Pour the oil mixture over the macaroni and vegetables. Stir well. Cover bowl and place in the refrigerator 2 hours. Remove, stir and serve.
